Now you know my story, and my kiddos blog names – Job and Lizzie. I have so much to share with you, but do not want to overwhelm you. So, I am going to share my day to day of how I incorporate the GFCFSF diet into our lives. HA! More like how my life has been radically changed to be able to keep my kids on the GFCFSF diet!

Basically, if your grandmother ate it, you have a shot of giving it to your kiddos. Yep, that means cooking from scratch. Some of you would view that as an adventure, a challenge, or a privilege bestowed on you the mother.

I am not one of those moms. I can find plenty of crafty – organizational things I’d rather do than cook. My son would be fine with a few new foods and the basics. He’s not an eater either. My daughter on the other hand – she’s an eater. I always thought I’d grow into an adult palate. I didn’t. She was born with one.

This has its pluses and minuses. Plus – she will try anything! Minus – she gets bored with food easily. Plus – she wants to help me cook. Minus – she wants to help me cook. Plus – she will eat salads. Minus – she wants to eat all the time! You get the idea.

So – I cook from scratch. In the next few weeks I will share our favorite recipes, the few items we can eat on the road and tips for saving money on “the diet”.

I started my kids on the diet “cold turkey”. The benefit was that I could cleanse the house of the kid’s favorite GFCF items and stock it with OK alternatives. My kids did not have a terrible withdrawal from gluten or casein.

Casein leaves the blood in about 8 days. So usually people take their kids off that first to see if they notice a difference. Gluten takes a good 12 weeks. We noticed changes immediately, but there were still lingering effects for 3-4 months. The stricter you are, the quicker the results. It is so frustrating to realize 2 months into the diet that the milk substitute you chose had hidden gluten! For us, we continued to notice diet related changes for about 4 months. It was a slow process.

I wasted many hours and countless dollars on substitute foods. If I were starting over I would not try to make “safe” macaroni and cheese. Skip it – you can’t. But 6 months later you will be able to make substitutes of their favorites and they will love you for it!
