Why Summer is a great time to start the GFCF diet

Once you decide to try the GFCF diet with your kids, gather as much information as you can and then – go for it! You can research until the cows come home, but doing it is what matters. I think now is the perfect time to start!

We started the diet last year on May 20. I started at the end of the school year to see what would happen to the kid’s school day. You can read about that here. I planned out exactly what I would feed the kids and got started.

Another benefit of starting the in summer is that you don’t have to worry about packing lunches!! Packing lunches is my weakness. Luckily I don’t have to blog about that until August! ? Summer is also a great time for fresh fruit – grilling out and salads. All of which are diet friendly.

I was at Job’s school yesterday serving lunch and once again our parent discussion turned to the food choices offered to our kids. When I share what we are doing as a family, I am always hesitant. I expect weird looks, and arguments about how “that’s good for you, but we don’t need it”. That is rarely the reception I receive. These moms were interested.

And why wouldn’t they be? We are paying for private school, doctors, and medicines. Why wouldn’t we pay for healthier food? Parents are hungry for answers about how to make their kids healthier and happier. The websites I listed yesterday will help you get started. If you missed it, click here.
Here are a few GFCF summer foods to get you started:
• Hamburgers without the bun
• Kahn’s hotdogs
• Lay’s potato chips
• Fruit
• Veggies with “safe ranch” recipe here
• Salsa and corn chips
• Mike Sells popcorn delights
• Snow cones
• Grilled chicken
• Grilled steak
 • Cascadian Farms French fries

So, are you going to take the plunge? Leave a comment to let me know you are starting the diet. Or if you are a “pro” – leave a comment to help a “newbie”!
