Uno’s Pizza

My kids love pizza, mac n cheese, and goldfish crackers. All of which I have tried to copy on the diet. Like I said here, in the early months, don’t even try these substitutions. Your kid’s taste buds remember what real pizza tastes like, and will not like the alternatives.

My first successful pizza substitute was a Chee-be crust with Ragu pizza sauce and rice shreds. For months this was acceptable.

In February Uno’s pizza introduced a gluten free pizza. I as so excited!! My husband was out of town. I got the kids off the school bus and headed over to the local Uno’s. The kids couldn’t believe we were going to buy real pizza at a real restaurant!

Lizzie’s face says it all! They loved it! I bought a second pizza to go for dinner later that night. Now while the pizza crust is gluten free, there is a bit of milk in the sauce and nitrates in the pepperoni. We were “living on the edge” HA!

After the pizza we took a short trip to Wal-Mart. Job was BOUNCING off the walls. Milk could have done that, but I wasn’t so sure. A few yahoo posts later and I had my answer, – Phenols.

It turns out that you can have ADHD symptoms from phenols. This is the premise behind the Feingold diet. Ironically, Epson salts lower a phenol reaction. So since I knew that my kids responded well to Epsom salts, I was pretty sure the high phenol tomatoes were to blame for this wonderful bouncy trip to Wal-Mart.

We still buy Uno’s pizza – hold the cheese – add the pepperoni please. The kids love it and I deal with the added bounciness.

** note – currently UNO’s pizza is a no no  for us, but definately worth the try!
